our weekend.


our weekend was great.

biggest news?  my friend erin had a baby girl!  that baby has a wonderful mom and i'm thrilled for her and her beautiful family.

at our house, the weekend was filled with all things domestic.  you know, baking, cleaning, sewing.

firstly, i'm going to say something that even shocks me; i'm considering becoming a vegan.  ok, maybe a 85% vegan, similar to my previous position on being a vegetarian, where i went back and forth about whether chicken was cheating.

i don't have a huge moral reason to eliminate animal derived food from my diet, it's more that i've realized i could potentially live a pretty satisfied life without it.  well, if there was no such thing as cheese that is.
i drink non-dairy milk and prefer it, i never have craved meat and my favorite foods are of the carbohydrate persuasion.  i already use many alternatives to butter and eggs in baking and while i adore frozen yogurt, there are acceptable substitutes out there.  cheese, well, i'm not sure about that one...

anyway, M checked out a cookbook from the library for me called The Happy Herbivore and there are many recipes i'm excited about.


i made one of them for our sunday breakfast.  sans butter and eggs, this pumpkin bread is amazingly good and good for you... until the maple glazing comes into play, that is.

pumpkin bread
bread
1/4c non-dairy milk
1/4 tsp lemon juice
1 15oz can pure pumpkin
1c brown sugar
2T pure maple syrup
1t vanilla extract
2T pumpkin pie spice
2c whole wheat flour
1t baking soda
1/2t baking powder

icing
1c confectioners' sugar
2T pure maple syrup
1t ground cinnamon
1t vanilla extract

1| preheat oven to 350f
2| whisk non-dairy milk & lemon juice together until bubbly, set aside.
3| in med bowl, cream pumpkin, sugar, maple syrup and vanilla.
4| in large bowl, whisk pumpkin pie spice, flour, baking soda, and baking powder together.  (i also added a handful of flaxseed, optional.)
5| pour wet mixture over dry, mix until combined.
6| pour into loaf pan & bake for an hour
7| mix icing ingredients, vary sugar based on how thick you'd like it.

i also did some sewing.
here are some shots of my soon-to-be finished quilt (i will neglect to tell you when i started aforementioned quilt).  it was my goal to make at least one entirely sewn-by-hand quilt and i'm nearing the finish line.
